Buffalo Cauliflower Bites
Some days, I literally think if I don't get a buffalo chicken finger, I won't survive another minute. Today was one of those days!
However, breaded chicken was not on the meal plan for today, so instead, I had to come up with a plan to get my buffalo fix in a more creative and healthy manner. I only have 5 more days of Core de Force and I'm trying as hard as I can to stick to the plan as best as possible!
So, after much googling, I decided on Buffalo Cauliflower Bites! They were awesome! I will surely be adding this to my list of favorite, healthy appetizers. These would even be great on a salad, as well!
INGREDIENTS:
6 cups of cauliflower florets
3/4 cup of hot sauce (I use Red Hot)
1tbsp butter (you can sub a different alternative, like EVOO or coconut oil. I will try this with coconut oil next time to make it even cleaner, but the butter I used was grass fed. We don't usually even have butter in the house, but I had some left over from the mashed potatoes for Thanksgiving dinner).
2tbsp garlic powder
pinch of salt & pinch of pepper
DIRECTIONS:
-preheat oven to 450 degrees
-in a large ziplock back, mix all ingredients
-on a greased pan, spread cauliflower
-bake for 20 minutes
-cool & serve!
These are best served with ranch, in my opinion! I know you're now probably like... what's the point of this healthy alternative if you're just going to slather it in ranch?! WELLLL... I make my own healthier version of ranch dressing with Mrs. Dash ranch seasoning and Greek yogurt!
Give these little guys a try and let me know what you think!
