Turkey Taco Soup Ingredients - 1 tbsp. olive oil - 1 lb. ground turkey - 4 cups chicken or vegetable stock - 1 small white onion, diced - 1 can (14.5 oz) diced tomatoes - 1 can (14.5 oz) crushed tomatoes - 1 can (14.5 oz) black beans, rinsed and drained - 1 can (14.5 oz) red kidney beans, rinsed and drained - 1 can (11 oz) whole kernel corn - 1 can (4 oz) diced green chiles - 1 tbsp. chili powder - 1 tsp. garlic powder - 1 tsp. black pepper - 1 tsp. cumin - 1 tsp. salt - ½ tsp. paprika - ¼ tsp. onion powder. - Toppings: tortilla strips, diced avocado, sour cream, lime wedges Directions  1. Heat oil in a sauté pan over medium high heat. Add ground turkey and sauté until browned, breaking up chunks and stirring frequently, about 4-6 minutes. Drain and then add the meat to the bottom of a slow cooker. 2. Hearty Miso Soup

This soup is adapted from the Ultimate Reset program! You can add rotisserie or cooked, shredded chicken if you'd like some animal protein added in, but this little bowl is FULL of lots of flavor and ALL VEGGIE!  INGREDIENTS: -1/2 onion, diced -1 carrot, cut diagonally in slices -1 celery stalk, cut -1 clove garlic, diced -2tbsp Miso Paste -2tsp sesame oil -1/2 tbsp EVOO -3 cups spinach or any leafy greens -1 cup broccoli florets -1 cup green beans -4 cups water DIRECTIONS: Heat EVOO, onion, carrot, celery, garlic on stove for 5 minutes stirring often. Add water and bring to low boil for 10 minutes. Add in spinach, broccoli, green beans and boil for another 5-7 minutes until veggies are tender. Remove from heat and add miso paste and sesame oil. The Path of Consolation

I've been home from Lourdes, France for a little over a week where I spent 10 days on Pilgrimage with North American Lourdes Volunteers. I promised I would blog all about this experience, but so many things come rushing to the forefront of my mind when I sit down to write, so I will be breaking the experience up into various articles so I can chew on it some more and you don't have to sit here reading an entire novel in one sitting. ;) Lourdes, for those of you who do not know, is a Marian shrine in Lourdes, France where Mary appeared to St. Bernadette when she was just a teen. She appeared to her 18 times and the message she gave to Bernadette is one of the most humble, holy stories I have ever heard. If you haven't heard about Bernadette - google it until I have a chance to blog that part! It's amazing and will remind you that no matter how small you think you are, God's plan for you is huge. Completely Guilt-Free Pizza

It's no secret I love pizza. I don't always love how I feel after I eat it, so I'm always on the hunt for ways to curb the craving, but also not taste disgusting. This crust made COMPLETELY OF EGG WHITES has blown my mind and so clearly, I had to share it with you all. Here you go! INGREDIENTS: -1 cup egg whites -toppings of your choice DIRECTIONS: -pour egg whites into hot, greased pan. (I use coconut oil cooking spray). - cook them until they no longer jiggle when you shake the pan. Flip the egg whites and cook other side. Continue to flip and cook until golden and a crsipy on the edges. -lower heat on pan and add your toppings! The photo here shows a "taco pizza" I made with pre-cooked ground turkey, avocado, greens, goat cheese, and hot sauce! I have also made a "BBQ chicken pizza" version and it was BOMB!
