Here's the recipe!
INGREDIENTS:
(I was making these for the both of us & for extra for the week- this will make approx 12-14 pancakes depending on size!)
*2 scoops chocolate protein powder (you could use vanilla!)
*1 cup egg whites
*1 banana
*1 tsp. powdered peanut butter (why not?!)
*1/2 tsp. baking powder
FOR STRAWBERRY SYRUP:
*2 cups strawberries (frozen is fine!)
*juice from 1/2 lemon
*1/2 cup raw honey
DIRECTIONS FOR PANCKAES:
1. put all ingredients in blender & blend until smooth!
2. heat skillet & cook pancakes until they start to bubble on one side, then flip!
REPEAT TIL ALL BATTER IS GONE!
DIRECTIONS FOR STRAWBERRY SYRUP:
1. put all ingredients in small sauce pot
2. simmer for 15 minutes, crushing strawberries every so often
3. when done, should be a syrupy texture!
Pour desired amount of syrup on top of pancakes & enjoy! The leftovers, I individually wrapped in sandwich baggies & threw in the freezer for quick grab & go breakfast's during the week!
