Bacon Wrapped Chicken

This is probably one of my husband's favorite dinners that I make. This started out as a super UN-CLEAN meal I would make for us ALL THE TIME way back when, (like when I was 30lbs heavier) but since then I have had to clean it up to fit our healthier lifestyle.

IF you're in the mood to make this a little more artery clogging, go ahead and add a dollop of cream cheese and pinch of shredded cheese into the center of these chicken roll-ups. They are AMAZING and are definitely worth it every now and then!

BUT, if you're looking to "clean it up" or are "dairy free" -- here is a better option!

INGREDIENTS:

Chicken breast
Uncured, Nitrate free bacon (we get ours at Trader Joe's or Aldi's)
Chicken Seasonings of choice (I use pink himalayan sea salt, pepper, celery powder, and garlic powder)
Plastic Wrap
Hammering tool of some sort (I think I use a potato masher)

DIRECTIONS:

Preheat oven to 400 degrees.

Lay Plastic wrap on flat surface (cutting board). Place chicken on top of plastic wrap and then put another piece of plastic wrap on top of the chicken breasts. Hammer them down until they are thinner and easier to roll up. Remove chicken from plastic wrap.

Place two pieces of bacon side by side on cutting board. Place chicken on top of bacon and roll up tightly. Place chicken bacon roll-ups into a greased pan with the "seam" facing down.

Place into oven and cook for 40 minutes. Broil on high for 5 minutes to finish if you would like the bacon "crisiper".

I usually pair these with green beans and sweet potato fries! This dinner is really SO SIMPLE to make, but always a fan favorite!
